Favorite Thanksgiving Recipes

Hello Fellow Fae. This was a busy week! I know for my family it's been abnormally busy since I work full time and I'm cooking the dinner. Today I'd like to talk about some of my favorite recipes.



1- Sweet Potato Casserole

Cook Time: 30 minutes


-3 cups cooked and mashed sweet potatoes

-2/3 cup sugar

-1/2 cup butter, softened

-2 eggs, lightly beaten

-1 teaspoon vanilla

-1/3 cup milk


Toppings:

-1/3 cup butter, melted

-1 cup brown sugar

1/2 cup flour

-1 cup chopped pecans


  1. Boil and mash sweet potatoes.

  2. Beat in sugar, butter, eggs, vanilla and milk until smooth and creamy.

  3. Put in 9x13" greased pan.

  4. To make topping, combine topping over sweet potatoes.

  5. Bake at 350 F for 30 minutes or until crumble top is brown.

I gave this recipe to my great-gran a few days ago. She really enjoys it. I do believe she's plans on cutting the recipe when she makes it. I add a little cinnamon and nutmeg to my recipe. This is my favorite because this was "my dish" to add to Thanksgiving dinner.



2- Salted Caramel Apple Hand Pies:

Cook Time: 15 minutes

Prep Time: 1 hour


-2 cups small diced, peeled apples

-2 teaspoons fresh lemon juice

-1/2 teaspoon cinnamon

-1/4 cup sugar

-store bought pie crust

-2 teaspoons all-purpose flour

-8 store bought soft caramels, chopped



  1. In a small bowl, combine the apples, lemon juice, cinnamon, sugar and flour, stirring until thoroughly mixed. Set aside.

  2. Preheat oven to 425 F.

  3. Remove the dough from refrigerator and unfold it onto a well-floured surface, rolling it out to a 14x14" square.

  4. Using a 3" circular cookie cutter/cup, cut out as many circles as possible. Re-roll scraps and continue cutting out dough.

  5. Place six of the dough circles on a parchment lined cookie sheet. Spoon a small portion of the apple filling onto the center of each circle, leaving room at the edges. Place 1 to 2 pieces of the cubed butter on top of the filling on each pie.

  6. Place the other half of the pie crust circles on top (use some water or the egg was to dampen the edges and help seal them together it needed) then crimp the edges with a fork.

  7. Brush the top of each pie with the egg wash. Sprinkle with coarse sugar if desired, then cut 2 to 3 slits in the top of each pie.

  8. Baked for 18 to 22 minutes or until the pies are golden brown and the filling is bubbling. Remove from the oven and set aside to cool slightly before serving.


The original blog I got this recipe from is on longer active. This is one of my favorite recipes because I made this for the Thanksgiving we had in Ohio the year I got pregnant with Panda.



3- My great-great grandmother's dressing

(Of course I will not be giving this recipe out. I'm sure your family already has one or something along those lines)



Tomorrow, (or today, since it's 4 in the morning) I get to work my first Black Friday at THD! I'm hoping it's not going to be too busy since we've been running the appliance sale all month.
